Avocados are in season and what a better way of utilizing these fruits by making this avocado egg salad toast. This recipe is so refreshing especially when taken in the morning with a cup of coffee or tea. It is healthy too and quick to prepare. It only takes 30 minutes.
Ingredients
5 – 6 eggs
1 ripe avocado
1 green onion
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
4 slices of bread
finely chopped parsley (optional)
Method:
Pre-boil the eggs and let them cool
In a bowl, mash the avocado into desired consistency
Break the boiled eggs and gently stir into the avocado, add the green onion, lemon juice, salt and pepper and mix gently.
toast the bread and spread the mixture over. Spring the parsley Serve immediately.
