- Cinnamon, ground
- Raisins
- eggs
- Baking powder
- Vegetable oil
- Milk
- Salt
- Vanilla extract

Instructions:
- Soak the raisins in hot water for 15 minutes. Soaking the raisins makes them tender and plumper.
- Preheat oven to 350°F and grease muffin cups with cooking spray. Alternatively you can line the cups with papers liners.
- Combine the flour, baking powder, salt, cinnamon powder and sugar. Mix with a whisk to combine then set aside.
- In a separate bowl, mix together vegetable oil or melted butter , sugar, eggs, and milk. Mix well to blend. Pour the flour mixture into this mixture and fold together until well blended. Avoid over mixing the batter.
- Add the soaked raisins to the batter and fold in gently without over mixing.
- Scoop the batter and divide among the lined muffin cups filling upto 3/4 of the cups; leaving space for the muffins to rise.
- Bake for 20 minutes or until a toothpick inserted at the middle of the muffins comes out clean.
- Remove from the oven and let them cool in the pan for 5 minutes then transfer to a wire rack to cool further. Serve with tea or coffee, as a snack, or dessert.
