Instructions
- In a large bowl, mix together the liquid ingredients; butter, sugar, buttermilk, vanilla essence.
- Add the eggs and whisk until well combined.
- Add the mashed bananas and flax seeds and stir in well.
- Sift the flour, baking powder, baking soda, salt and cinnamon into a separate bowl, stir to mix well.
- Gradually fold the mixture into the banana eggs mixture and mix until well incorporated.
- Toss blueberries in a little flour before adding them to the batter to prevent them from sinking to the bottom during baking.
- Gently fold in the blueberries into the mixture ensuring that they do not break.
- Pour the mixture into the loaf tin, smooth the top and tap the tin on the surface to remove any air bubbles.
- Sprinkle over the pumpkin seeds on top of the bread batter.
- Put the loaf tin into the preheated oven and bake for 40-55 minutes or until the test for doneness returns positive results.

Notes
- Use fresh blueberries because they work best as they hold their shape and don’t bleed as much into the batter. You can still use frozen ones if that’s all you have. Add them directly from the freezer to the batter to prevent them from turning the bread purple.
- You can use chia seeds instead of the flax seeds. For a smoother texture, grind the seeds before adding them.
