  • 1 cup fresh blueberries

Step 1:

  1. Preheat your oven to 180°C. Grease a muffin tin (or use ramekin like I do) with cooking oil/spray or line with paper liners.

Step 2:

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt (dry ingredients).
  2. In a separate bowl, whisk together the egg, melted butter/oil, and milk (wet ingredients).
  3. Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.
  4. Gently fold in the blueberries until evenly mixed.
  5. Scoop the batter into the prepared muffin tin ensuring that it’s evenly filled among the muffin cups, filling each about 2/3 full. I use an ice cream scoop to do this.

Step 3:

  1. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the muffins to cool for a few minutes in the tins, then transfer them to a wire rack to cool completely before serving with tea, coffee or as a snack.
