Serves 4
Ingredients:
- 11/2 cups all purpose flour
- 1 tsp salt
- 2 tbsp sugar
- 1 large egg
- 3 tbsp butter
- Zest of 1 lemon
- lemon juice to serve
- 1 large handful of blueberries to serve
- Castor sugar to serve (optional)
Preparation:
In a large bowl, sift together the flour, salt and sugar,
make a well in the centre of the mixture and add the milk, egg, butter and lemon zest,
Stir well until the batter is smooth.
Heat some butter or olive oil in a pan over medium high heat,
scoop the batter and pour onto the pan then spread evenly so that it forms a thin layer,
cook for three minutes then turn and cook the other side for another three minutes,
cook the rest of the pancakes.
To serve, sprinkle the pancakes with a squeeze of fresh lemon juice, castor sugar and a handful of blueberries.
