A pancake is simply a thin round cake that is prepared using wheat flour batter. It may also contain eggs, milk and butter or oil. It can be leavened or unleavened. When leavened, typically baking powder is used creating a thick fluffy pancake. When unleavened, it is thin, moist and flat cooked on one side or both sides. It can also be sweet, cooked with sugar or savoury, cooked with salt and spices. When cooked using potatoes instead of wheat, it is called potato pancake and when cooked using buttermilk in place of milk or together with milk, it is called buttermilk pancake. A thin flat unleavened pancake can be filled with jam, cream cheese, chocolate, fruits etc. Here is a recipe of scrambled eggs cheese pancake that you can prepare simply and easily at home.

- 2 cups all purpose wheat flour
- 1 cup milk
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 large tomatoes
- 2 red or white onions
- 4 large eggs
- Cheese
- salt to taste
- 1 tablespoon dark soy sauce
- olive oil
- Sieve the flour and salt into a mixing bowl.
- make a hole at the centre and add milk and olive oil.
- Whisk well into a smooth batter to make a slightly thin consistency.
- Set a frying pan over medium heat and pour 2 teaspoons of oil. using a small brush, spread the oil throughout the pan
- When hot, pour you batter into the pan and tilt the pan to spread it evenly. You can also use a spoon to spread the batter.
- Cook your pancakes for 1 min on each side until golden
- Chop the onions and the tomatoes separately into thin half rings
- Grate the cheese
- Beat the eggs and whisk them until the white and york are thoroughly mixed. Add some little water and whisk again.
- Brush a pan with olive oil and preheat over medium heat.
- Pour in the egg mixture, some salt and cook for a few seconds then turn. Continue turning until egg mixture is set.
- Add the grated cheese and cook for another minute until the cheese is melted.
- Remove and set aside
- On a separate pan, brush oil with olive oil and add the onions then sauté for 1 minute. Don’t put salt to the onions because the soy sauce has salt. However, if you do not use soy sauce, add a pinch of salt.
- Add soy sauce into the onions and cook for another 30 second then remove from the pan and set aside
- On the same pan, add the tomatoes and a pinch of salt and sauté for 30 seconds then remove.
- Arrange the eggs, onions and tomatoes at the centre of each pancake and then fold them twin into a triangle shape. Alternatively you can arrange the fillings on one end of the pancake then roll into a sausage shape.
