Combine dry ingredients
- In a large bowl, sift flour, baking powder and baking soda into a bowl then add sugar and salt. Whisk thoroughly to blend
- Add 1 cup of chocolate chips into the flour mixture and combine gently. You can also skip this step and add the chocolate chips in the last stage.
Combine wet ingredients
- Mix eggs, vanilla, oil, melted butter and milk in another bowl. Whisk until completely smooth.
Add wet ingredients to dry ingredients
- Pour the wet ingredients into the bowl with dry ingredients and gently whisk to combine.
- Cover and set aside while the oven preheats to 425°F and line 12 muffin cups with paper liners.
Bake the muffins
- Scoop the batter using an icing cream scoop or a big spoon.
- Divide the batter evenly into the lined muffin cups filling upto the top.
- Sprinkle the remaining chocolate chips on top of each filled muffin cup.
- Bake at 425°F for 5 minutes then reduce the temperature to 350°F and bake for another 10-15 minutes.
