Combine dry ingredients

  1. In a large bowl, sift flour, baking powder and baking soda into a bowl then add sugar and salt. Whisk thoroughly to blend
  2. Add 1 cup of chocolate chips into the flour mixture and combine gently. You can also skip this step and add the chocolate chips in the last stage.

Combine wet ingredients

  1. Mix eggs, vanilla, oil, melted butter and milk in another bowl. Whisk until completely smooth.

Add wet ingredients to dry ingredients

  1. Pour the wet ingredients into the bowl with dry ingredients and gently whisk to combine.
  2. Cover and set aside while the oven preheats to 425°F and line 12 muffin cups with paper liners.

Bake the muffins

  1. Scoop the batter using an icing cream scoop or a big spoon.
  2. Divide the batter evenly into the lined muffin cups filling upto the top.
  3. Sprinkle the remaining chocolate chips on top of each filled muffin cup.
  4. Bake at 425°F for 5 minutes then reduce the temperature to 350°F and bake for another 10-15 minutes.
