The loaf is made using blueberries and lemon zest. You can use frozen blueberries or just fresh ones. However, you will have better luck with fresh ones. This is because frozen berries tend to bleed easily and sink to the bottom of the loaf. If you do not want your frozen berries to stick to the bottom of the pan, put the loaf into the oven immediately after you pour the batter. You should not let the batter rest, ok!

  • Honey, 3/4 cup
  • eggs, 2
  • Plain yogurt, 1/2 cup
  • Baking powder, 1 tablespoon
  • All-purpose flour, 3 cups
  • Lemon Zest, 1 lemon
  • Blueberries, 1 cup
  • Lemon juice, 1 lemon
  • Salt, 1 table spoon

These ingredients makes one loaf.

Instructions:

  • Cream butter and add honey. Beat well until well blended
  • Add beaten eggs, yogurt, and lemon juice. Beat again to combine well.
  • In a separate bowl, mix the dry ingredients: Flour, baking powder and salt
  • Stir the dry ingredients into the wet ingredients (yogurt mixture) and mix well until just blended
  • Fold in the lemon zest and the blueberries.
  • Pour the batter into greased loaf pan
  • Bake in a preheated oven at 350°F for 50 minutes. You can test with a tooth pick; the loaf will be ready if a tooth pick comes out clean.
  • Remove the loaf from the oven and cool in the pan for 10 to 15 minutes then turn out on to a wire rack to cool completely before slicing.
  • If you intent to glaze the loaf with honey and lemon juice, Do it while the bread is warm, before cooling.
