Blueberry Lemon Loaf
This blueberry lemon loaf is made using blueberries and lemon zest. You can use frozen blueberries or just fresh ones. However, you will have better luck with fresh ones.

Ingredients

lightly beaten

plain yogurt

salt

baking powder

all-purpose flour
Zest of 1 lemon

Blueberries
Juice of 1 lemon
Instructions
Step 1: Mix wet ingredients
Cream butter and add honey then beat well until well blended
Add beaten eggs, yogurt, and lemon juice. Beat again to combine well.
Step 2: Mix dry ingredients
In a separate bowl, mix flour, baking powder and salt
Step 3: mix wet and dry ingredients
Stir the dry ingredients into the wet ingredients (yogurt mixture) and mix well until just blended
Step4: Add lemon zest and Blueberries
Fold in the lemon zest and the blueberries into the mixture.
Step 5: Bake
Pour the batter into greased loaf pan
Bake in a preheated oven at 350°F for 50 minutes.
You can test with a tooth pick; the loaf will be ready if a tooth pick comes out clean.
Step 6: Cool
Remove the loaf from the oven and cool in the pan for 10 to 15 minutes
Turn out on to a wire rack to cool completely before slicing.
Step 7: Serve
Slice and serve with tea or coffee as breakfast, snack or as dessert
