- Scald the milk and combine it with honey in a large bowl then set aside to sit until lukewarm
- Dissolve yeast in warm water and stir into cooled milk mixture.
- Add salt, cinnamon powder and oil. Stir well until well mixed.
- Add flour to the mixture one cup at a time stirring well after each addition. Stir until the dough holds together and it is not sticky.
- Turn out onto a floured surface. Knead for 8 minutes adding more flour until the dough is no longer sticky and springs back when pressed.
- Put dough in an oiled bowl and cover with a towel and let rise in a warm place until double in size; about 1 hour and 30 minutes.
- Turn out dough onto a lightly floured surface and divide into half. Set one half aside.
- Roll the dough into a rectangle shape. Drizzle honey over the dough. Sprinkle with cinnamon powder and your preferred chopped nuts and raisins on the dough.
- Roll up the dough, starting with the shorter side. Pinch the ends together and put in a buttered loaf pan.
