  • 1/2 teaspoon nutmeg powder
  • 1/2 teaspoon salt.
  • 1/2 cup cooking oil/melted butter

Instructions:

  1. Preheat the oven to 180°C and grease a cake tin with butter or cooking oil
  2. In a mixing bowl, whisk together the rice flour, baking powder, baking soda, salt, nutmeg and xanthan gum powder.
  3. In a separate bowl, beat the eggs and add in the honey, cooking oil or melted butter, lemon zest and lemon juice. Mix well.
  4. Add the dry ingredients to the wet ingredients alternating with almond milk and stir until the batter is smooth.
  5. Add in the raisins and stir gently to mix well.
  6. Pour the batter into the greased cake tin and smooth the top with a spatula.
  7. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool for 10 minutes before serving.
  9. Serve as a dessert or with tea or coffee for breakfast.
