Lemon raisins rice cake is a type of dessert that is made with rice flour, raisins, lemon zest, and other ingredients. Rice is a gluten-free alternative to wheat flour, this makes this cake a delicious, healthy and perfect alternative for people who are sensitive to gluten or have celiac disease
Preheat the oven to 180°C and grease a cake tin with butter or cooking oil
Step two:
In a mixing bowl, whisk together the rice flour, baking powder, baking soda, salt, nutmeg and xanthan gum powder
In a separate bowl, beat the eggs and add in the honey, cooking oil or melted butter, lemon zest and lemon juice.
Step three:
Add the dry ingredients to the wet ingredients alternating with almond milk and stir until the batter is smooth.
Add in the raisins and stir gently to mix well.
Pour the batter into the greased cake tin and smooth the top with a spatula.
Step four:
Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool for 10 minutes before serving.
Serve as a dessert or with tea or coffee for breakfast.
Notes
If you do not have the xanthan gum, increase the eggs to 2 to allow proper bidding of the batter for better result. You can also use other alternative to eggs such as chia seed powder.
