- Add chocolate chips into the mixture and gently mix using a spatula. Mix until just combined to avoid overmixing the batter.
- Using an ice cream scooper of a big spoon, spoon the batter into greased or lined muffin cups, filling them all the way to almost the top.
- Top each filled muffin cup with chocolate chips
- Bake in the preheated oven for 5 minutes at 425°F then, keeping the muffins in the oven, reduce the oven temperature to 350°F. Bake for another 15 minutes or until a toothpick inserted in the center comes out clean.
