Whether enjoyed warm with a glass of milk or as a grab-and-go treat, double chocolate chips muffins are a satisfying way to satisfy any chocolate craving.
Preheat oven to 425°F. Spray a 12 hole muffin pan with nonstick spray or line with paper liners.
Step 2: Mix dry ingredients
In a large mixing bowl, whisk together all-purpose flour, sugar, cocoa powder, baking soda and salt and set aside.
Step 3: Mix wet ingredients
In another bowl, whisk together the eggs, plain yogurt, vegetable oil and milk until well combined.
Step 4: mix dry and wet ingredients
Pour the flour mixture into the egg mixture and gently mix together with a spatula until slightly combined.
Step 5: add chocolate chips
Add chocolate chips into the mixture and gently mix using a spatula. Mix until just combined to avoid overmixing the batter.
Step 6: fill muffin cups
Using an ice cream scooper of a big spoon, spoon the batter into greased or lined muffin cups, filling them all the way to almost the top.
Top each filled muffin cups with chocolate chips
Step 7: bake the muffins
Bake in the preheated oven for 5 minutes at 425°F then, keeping the muffins in the oven, reduce the oven temperature to 350°F. Bake for another 15 minutes or until a toothpick inserted in the center comes out clean.
Step 8: remove, cool and serve
Remove from the oven and cool them for 5 minutes in the muffin pan, then transfer to a wire rack for further cooling.
