To add a twist to these banana chocolate chip muffins, I added 1/2 cup of oats. for texture and nutrients. You can use flour of your choice to make these muffins.

Ingredients for Banana chocolate chips muffins
- All-purpose flour
- Oats
- Ripe bananas
- Eggs
- Leavening agent
- Melted butter/margarine
- Sugar/honey
- Salt
- Chocolate chips
How to bake Banana chocolate chips muffins
Mash the bananas with a fork in a large bowl then add the sugar or honey, eggs and melted butter and whisk to mix. On a separate bowl, sift the dry ingredients; all-purpose flour, baking soda and baking powder and salt then add the oats then mix together. Add dry ingredients into the wet ingredients then mix until the flour is well mixed but do not overmix. Add the chocolate chips and fold in with a spatula until combined evenly.
Scoop the batter and pour into greased or lined muffin cups. Fill evenly upto 3/4 of each muffin cup and bake at 180°C for 15 – 20 minutes or until the toothpick test comes out clean. Once ready remove the muffin tin and let the muffins cool in the tin for 5 minutes then remove and let them continue cooling on a wire rack before serving.

Ingredients
- 1 cup all-purpose flour
- ½ cup oats
- 2 Bananas ripe
- 2 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- ½ cup butter/margarine melted
- ¾ cup sugar/honey
- ½ tsp salt
- ¾ cup chocolate chips
Instructions
Step 1
- Pre-heat the oven at 180°c and line or grease muffin cups
Step 2
- In a large bowl, mash the bananas with a fork then add the sugar, eggs, melted butter and whisk together.
- In another bowl, sift the flour, baking powder, baking soda and salt and mix them well. Add the oats into the mixture and mix.
- Mix the dry ingredients with the banana mixture (wet ingredients) and mix with a spatula. Do not overmix.
- Add the chocolate chips and fold in with a spatula until combined evenly.
Step 3
- Scoop the batter and pour into greased or lined muffin cups filling evenly upto 3/4 of each muffin cup.
- Bake at 180°C for 15 – 20 minutes or until the toothpick test comes out clean.
- Remove the muffin tin and let the muffins cool in the tin for 5 minutes then remove and let them continue cooling on a wire rack before serving.
- Serve with tea or coffee of as a snack.
