  • ¼ tsp bicarbonate of soda
  • 2 tsp baking powder
  • ½ tsp salt
  • 90 g dairy free margarine
  • 150 g sugar
  • 2 eggs beaten
  • 1 tsp Vanilla extract
  • 2-3 ripe bananas mashed

Instructions

Step 1: preparations

  • Prepare the oven by pre-heating it to 350°F (180°C)

Step 2: Mixing

  • Mix together the flours, xanthan gum, baking powder, b1carbonate of soda and salt.
  • Cream together the margarine with sugar
  • Add eggs and vanilla to the creamed mixture and blend together well.
  • Mix the flour with the batter
  • Alternate adding flour and the mashed bananas to the creamed mixture beginning and ending with the flour mix. This should be three adding of flour mix and two additions of mashed bananas

Step 3: Baking

  • Spoon the dough into a greased bread pan
  • Bake for 45-50 minutes

Step 4: Cool and serve

  • Remove from oven and cool in the pan for 10 minutes
  • Remove from pan and place on cooling wire to continue cooling. Let it cool completely
