Why grain-free, low-carb spicy coconut banana bread?

This coconut banana bread is made with coconut flour instead of regular flour, so it doesn’t have any grains. It’s good for people on diets that are low in carbohydrates and need to avoid gluten. Coconut flour is also high in fiber, which is good for digestion. It adds a coconut taste to baked goods, which is perfect for this recipe. Bananas are delicious and contain lots of vitamins, minerals, and fiber. They have potassium, vitamin C, vitamin B6, and manganese, which are all important for our health. Bananas also naturally sweeten the bread, so you don’t need to add a lot of sugar. Adding spices to the recipe enhances the flavors in the bread.

How do you make spicy coconut banana bread?

First, start by gathering the necessary ingredients. You can find coconut and arrowroot flours in supermarkets or grocery stores near you. These are the ingredients that you require for this recipe:

  • Coconut flour

  • ground flaxseeds
  • Ripe bananas
  • ground nutmeg
  • ground cardamom
  • baking powder and baking soda
  • coconut oil
  • Pure maple syrup
  • coconut milk
  • organic eggs
  • salt

Instructions:

Preheat your oven to 350°F (175°C) and grease a loaf pan with coconut oil or line it with parchment paper. Grind the flaxseed using a grinder and mash the bananas.

In a large bowl, combine the mashed bananas, eggs, melted coconut oil, maple syrup and coconut milk. Whisk until well combined. In another bowl, mix together the coconut flour, arrowroot flour, baking powder, baking soda, spices, and salt.

Gradually add the dry ingredients to the wet ingredients and mix well until fully combined. Pour the batter into prepared loaf pan and spread it evenly. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.

Once baked, remove the bread from the oven and let it cool in the pan for about 20 minutes. Then transfer it to a rack to cool completely before slicing.

Notes

  • Choose well-ripened bananas as they are sweeter and have a more intense flavor. This will enhance the taste of the bread.
  • Mash the banana well using a fork or a potato masher. Well mashed banana creates a more moist and tender bread.
  • Coconut flour is highly absorbent so it is important to add another gluten-free flour to it. Use either arrowroot flour or almond flour to achieve better results.
  • Accurate measurement is key here especially when working with coconut flour. Use measuring cups or scale to achieve the right proportions. Coconut flour absorbs moisture differently and therefore the need for precise measurements.
  • Spices will enhance the flavor of the bread so do not omit. You can replace the given spices with your favorite ones.
  • Ensure your loaf pan is properly greased with coconut oil or lined with parchment paper to prevent the bread from sticking. This will make it easier to remove the bread from the pan once baked.
  • Let the coconut banana bread cool completely on a wire rack before slicing. This will help it retain its shape and prevent it from crumbling.
  • Just like any other breads, do not overmix your batter. Overmixing leads to a dense and hard bread.
  • Adding some nuts will enhance the flavor, texture and nutrients in your bread. Pecans, walnuts go well with this bread. You can also use chocolate chips for the same.
