Notes
Choose well-ripened bananas as they are sweeter and have a more intense flavor. This will enhance the taste of the bread.
Mash the banana well using a fork or a potato masher. Well mashed banana creates a more moist and tender bread.
Coconut flour is highly absorbent so it is important to add another gluten-free flour to it. Use either arrowroot flour or almond flour to achieve better results.
Accurate measurement is key here especially when working with coconut flour. Use measuring cups or scale to achieve the right proportions. Coconut flour absorbs moisture differently and therefore the need for precise measurements.
Spices will enhance the flavor of the bread so do not omit. You can replace the given spices with your favorite ones.
Ensure your loaf pan is properly greased with coconut oil or lined with parchment paper to prevent the bread from sticking. This will make it easier to remove the bread from the pan once baked.
Let the coconut banana bread cool completely on a wire rack before slicing. This will help it retain its shape and prevent it from crumbling.
Just like any other breads, do not overmix your batter. Overmixing leads to a dense and hard bread.
Adding some nuts will enhance the flavor, texture and nutrients in your bread. Pecans, walnuts go well with this bread. You can also use chocolate chips for the same.
