  7. Place the cooking pot on heat and let the mixture boil for about 30 minutes on medium heat. Add a pinch of salt and let it cook for another 10 minutes.
  8. Reduce the heat, add the boiled peas and pumpkin leave puree and mash everything together using a wooden spoon until well blended. Remove from heat and set aside. If you have boiled the maize separately, remove from heat and mix with the potatoes and the green peas. Use a wooden spoon or potato masher to mash everything together until smooth.
  9. In another larger cooking pot, heat oil on medium heat and fry spring or red onions until golden brown. Reduce the heat and add the mashed mixture. Mix well to combine everything well.
  10. Remove from the heat and serve while hot. Mukimo can be served with beef stew or chicken stew. You can also serve with kachumbari salad.
