Mukimo is made using green maize (corn), potatoes and pumpkin leaves or spinach. Sometimes legumes such as beans or green peas are also used. Originally the dish was made with using starchy bananas or yams in place of potatoes before the latter became widely available in Kenya during the colonial era.
Peel the potatoes and wash them thoroughly then set them aside. You may slice them into halves or boil them whole.
Prepare the pumpkin leaves or spinach by removing the stalk and shredding them into small pieces., then wash thoroughly
Remover the kernels from the maize cobs and wash well.
Wash the green peas and boil them briefly to avoid overcooking them.
Step 2: Cook
Blanch the pumpkin leaves or the spinach then blend with a blender into a smooth puree. Set aside.
Mix the maize and potatoes in a cooking pot and add some water, just enough for everything to cook well. You can also boil them separately and mix when mashing.
Place the cooking pot on heat and let the mixture boil for about 30 minutes on medium heat.
Add a pinch of salt and let it cook for another 10 minutes.
Step 3: Mash together
Reduce the heat, add the boiled green peas and maize and mash together using a wooden spoon until well blended.
Add the pumpkin puree and mix well to combine.
Remove from heat and set aside.
Step 4: Fry the onions
In a pan, heat oil on medium heat and fry chopped spring or red onions until golden brown.
Remove from heat and add into the mashed mixture. Mix well to combine everything well.
Step 5: Serve
Serve while hot with beef stewor chicken stew. You can also add your favorite salad to add a punch of taste and nutrition to this dish.
