How to make one pot chicken and cabbage soup
Marinate the chicken
To make one pot chicken and cabbage soup, I use chicken breast fillet and a small to medium- sized cabbage head. Start by chopping the chicken breast into bite-sized pieces. Then marinate it with minced garlic and ginger and other spices and herbs of your choice. You can also add soy sauce or worcestershire sauce in the marinade though this is optional. Set the marinated chicken fillet aside and let it rest for 30 minutes.
Prepare and make the soup
Wash and rinse the cabbage then roughly chop it. Prepare the other ingredients too; chop the onions and prepare the homemade tomato sauce if not using store bought tomato paste. Heat 3-4 tablespoon of olive oil in a large pot over medium-high heat. Add the marinated chicken breast and fry until tender. Add one chopped onion and cook until the onion is translucent and the chicken is slightly browned. Then, add the tomato sauce and season with salt and pepper to taste. Cook for five minutes to let the chicken absorb all the flavors. Next, add chopped cabbage and two cups of chicken broth or water.
Bring the soup to a boil on medium-high heat and then reduce the heat to low. Cover the pot and let the soup simmer for about 15 minutes or until the cabbage is cooked to your desire. You can also add additional seasonings, such as parsley, or thyme for added flavor. Once the soup is done, serve it hot with a crusty bread, chapati bread or brown or white rice.
You can easily customize this one pot chicken and cabbage soup to suit different tastes and preferences. Add other vegetables, such as potatoes, green peas or carrots for a healthier and heartier soup. Sweet potatoes will also made a good choice to incorporate for a different taste of the soup.
