A one pot chicken and cabbage soup in a healthy and delicious dish that is very satisfying especially on a cold day. It is easy and quick to make and is packed with nutrients.

cabbage
large, roughly chopped

red onion

garlic
minced

black pepper powder

cumin seed

cayenne pepper

coriander seeds

Salt to taste

Instructions
Step 1: marinade the chicken
Chop the chicken breast into bite-sized pieces
Marinate it with minced garlic and ginger and other spices and herbs
Set aside for about 30 minutes.
Step 2: Prepare and make the soup
Wash and rinse the cabbage then roughly chop it.
chop the onions and prepare homemade tomato sauce;
if not using store bought tomato paste.
Heat 3-4 tablespoon of olive oil in a large pot over medium-high heat.
Add the marinated chicken breast and fry until tender.
Add one chopped onion and cook until the onion is translucent and the chicken is slightly browned.
Add the tomato sauce and season with salt and pepper to taste.
Cook for five minutes to let the chicken absorb all the flavors.
Add chopped cabbage and two cups of chicken broth or water.
Bring the soup to a boil on medium-high heat and then reduce the heat to low.
Cover the pot and let the soup simmer for about 15 minutes,
Remove from heat and serve hot with a crusty bread, chapati
or brown or white rice.
Notes
If desired, you can add additional seasonings, such as parsley, or thyme for added flavor.
