Drop Scones are fluffy, thick and small pancakes that are cooked by dropping spoonful of thick batter on to a pan or griddle and are quick and easy to make. They are also called scotch pancakes. Compared to pancakes, they are thicker and slightly raised whereas pancakes are in most cases flat.
Just like other pancakes, drop scones are very versatile; there are so many ways of making them. You can add fruits such as bananas to make banana drop scones or add spices to make them spicy. If you are gluten intolerant, make them using oats flour to make oats drop scones or use any other flour that is gluten free. Simply put, they allow you to be as adventurous as possible with your cooking.
This drop scones recipe is easy and quick to make at home with just a few ingredients. I mix all-purpose flour with oats flour to make the mini pancakes healthy. And when I am short of time in the morning, I quickly mix the ingredients with a blender to save time; especially if I am using a gluten-free flour. Feel free to cook using either a griddle or chapati/crepe maker if you have one. Advantages of using a chapati/crepe maker is that the batter will spread easily and the heat is controlled therefore the scones will cook perfectly well. You can serve them hot on their own for a healthy flavorful breakfast or spread with jam, honey or syrup for a morning deliciousness.
Quick and easy drop scone recipe

- 1 chapati maker/crepe optional
Ingredients
- 1 cup all-purpose flour
- 1 cup oats flour
- 2 eggs medium size
- 1 cup milk
- 1 tsp baking powder
- 1 tsp baking soda
- ½ cup sugar
- 1 tsp salt
- 2 tbsp cooking oil keep aside more for cooking
Instructions
Step 1:
- Mix the dry ingredients together
- Mix the liquids; milk, sugar/honey, eggs using a blender
- Add the dry ingredients into the egg /milk mixture and continue blending with the blender until the mixture is well mixed, making sure to scrape off any flour on the sides or at the bottom of the blender. This should take you 3-4 minutes; add the oil and blend for a few seconds.
Step 2:
- Heat the griddle or the crepe maker and grease with a little oil or butter
- Using a scoop or a serving spoon, scoop some batter and pour onto the greased griddle.
- Let it cook on one side before turning to cook the other side
- Remove from the heat and cook the rest of the drop scones the same way.
- Serve them plain or drizzle with your favorite syrup or some powdered sugar before serving. I prefer drizzling mine with natural honey.
