Drop scones are also referred to as scotch pancakes or mini pancakes. This recipe is easy and quick to make at home with just a few ingredients. you mix all-purpose flour with oats flour to make the mini pancakes healthy. And when you are short of time in the morning, quickly mix the ingredients with a blender to save time; especially if are using a gluten-free flour.
Mix the liquids; milk, sugar/honey, eggs using a blender
Add the dry ingredients into the egg /milk mixture and continue blending with the blender until the mixture is well mixed, making sure to scrape off any flour on the sides or at the bottom of the blender. This should take you 3-4 minutes; add the oil and blend for a few seconds.
Step 2:
Heat the griddle or the crepe maker and grease with a little oil or butter
Using a scoop or a serving spoon, scoop some batter and pour onto the greased griddle.
Let it cook on one side before turning to cook the other side
Remove from the heat and cook the rest of the drop scones the same way.
Serve them plain or drizzle with your favorite syrup or some powdered sugar before serving. I prefer drizzling mine with natural honey.
Notes
You can flavor your drop scones by adding turmeric and cinnamon or lemon zest and lemon juice. You can also use fruits such as bananas and berries to make fruit drop scones.
