Savory Spring Onion Pancakes

This Spring onion pancake is a comfort food to me. It takes me takes me back many years when I was growing up. My mother used to make these pancakes for us almost every weekend and I have never found any other better way of making such tasty pancakes- using Spring onions. Spring onions add a unique flavor and taste into our food and are loaded with essential nutrients such as Vitamin A, C and B2 among other nutrients. Hence a good reason why these pancakes bring good memories. Who said comfort food has to be boring!

How to make savory spring onions pancakes

Here’s an easy recipe to help you make these delicious spring onion pancakes right at home:

Ingredients

  • All-purpose flour
  • baking powder
  • Spring onions
  • eggs
  • milk
  • turmeric
  • Butter or cooking oil for cooking

Instructions

In a medium bowl, combine all-purpose flour, turmeric powder, baking powder and salt. Mix well to combine.

Make a well in the middle of the flour mixture and beat in the eggs and milk. Whisk to mix them well. If the butter is thick, add some milk to adjust the consistency to a thin batter.

Add the finely chopped spring into the butter and mix

Heat a lightly oiled pan on medium heat. Pour or scoop the batter onto the pan spreading to desired size. lightly oil and  brown on both side. Repeat this process until all the batter is finished.

Serve hot with tea or coffee.

For a healthier option, use gluten free flour instead of the all-purpose flour.
