Strawberries Muffins with Oreo base recipe
Ingredients
- 2 cups all-purpose flour
- 1 cup milk
- 2 eggs
- 16 Oreo cookies
- 1 cup strawberries washed and dried
- ¾ cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- ¾ cup butter melted
Instructions
- Pre-heat the oven to 180°C
- Mix well the flour with the sugar, salt, baking powder, and baking soda.
- In a separate bowl mix the melted butter/margarine with eggs and milk. Whisk to mix well.
- Mix the dry ingredients with the wet ingredients and mix using a spatula and ensuring that you don't over mix.
- Line the muffin cups with the liners and place an oreo cookie in each muffin cup.
- Scoop the batter with ice cream scoop and pour into the muffin cups to fill about a quarter or half of the cup. Place one whole strawberry at the middle of the cup and add more batter to cover it.
- When you have poured the batter into all the muffin cups, put into the oven and bake for 15-20 minutes or until the test for doneness comes out positive.
