Strawberries muffin recipe with Oreo base is a delicious and fun way of baking for the kids during school holidays. Oreo is a delicious cookie with two wafers that have cream at the center.
Mix well the flour with the sugar, salt, baking powder, and baking soda.
In a separate bowl mix the melted butter/margarine with eggs and milk. Whisk to mix well.
Mix the dry ingredients with the wet ingredients and mix using a spatula and ensuring that you don't over mix.
Line the muffin cups with the liners and place an oreo cookie in each muffin cup.
Scoop the batter with ice cream scoop and pour into the muffin cups to fill about a quarter or half of the cup. Place one whole strawberry at the middle of the cup and add more batter to cover it.
When you have poured the batter into all the muffin cups, put into the oven and bake for 15-20 minutes or until the test for doneness comes out positive.
Notes
Ensure that you do not overmix your butter because this will make your muffins less airy or gummy. Reduce the amount of sugar used if you like it less in your bakes.
