- 3 bunches Chopped Sukuma Wiki and spinach leaves 1 sukuma wiki 2 spinaches
- 1 red/white onion large
- 2 tomatoes large
- 3 spring onions
- ½ tsp chilli flakes
- ½ tsp turmeric powdered
- 1 tsp dhana jeera a mixture of powdered Cumin seeds and coriander seeds
- 1 tsp black pepper
- salt to taste
- cooking oil
Instructions
Step 1
- Chop the red onion, tomatoes and the spring onions
- On a cooking pan, heat the oil then put the onions and sauté for 2 minutes over medium heat until the onions are soft.
- Add chopped tomatoes and salt then cook while covered for 1-2 minutes.
- Add the spring onions and all the spices then cover and cook for another 1 minutes or until the tomatoes are thoroughly cooked.
Notes
- Dhana Jeera is basically a mixture of roasted coriander and cumin seeds. Turmeric and a few other spices may be added to the mixture but I prefer the one that does not have other spices added. It is a very versatile spice mixture that can be used to add flavor in almost any dish.
- Sukuma Wikis are cooked for a very short time to preserve the nutrients. Serve them immediately and ensure that there are no leftovers.
- Ensure that you do not overcook your sukuma wiki dish to retain the nutrients
