Sukuma Wiki (collard green) is a Kenyan staple food eaten by most of the communities in Kenya. The literal meaning for Sukuma wiki is stretch the week which implies a meal that is readily available and affordable for most household in Kenya. In order to cook tasty Sukuma wiki, I use spices and add a twist by including fresh spring onions to the mix. The end result is a finger-licking dish of Sukuma Wiki with a twist.

1red/white onionlarge
2tomatoeslarge
3spring onions
½tspchilli flakes
½tspturmericpowdered
1tspdhana jeeraa mixture of powdered Cumin seeds and coriander seeds
1tspblack pepper
salt to taste

Instructions
Step 1
Chop the red onion, tomatoes and the spring onions
On a cooking pan, heat the oil then put the onions and sauté for 2 minutes over medium heat until the onions are soft.
Add chopped tomatoes and salt then cook while covered for 1-2 minutes.
Add the spring onions and all the spices then cover and cook for another 1 minutes or until the tomatoes are thoroughly cooked.
Step 2
Add the chopped Sukuma wikis and spinach, stir and cover then cook over medium low heat for about 3 minutes while stirring.
Remove from the heat and serve immediately.
Notes
Dhana Jeera is basically a mixture of roasted coriander and cumin seeds. Turmeric and a few other spices may be added to the mixture but I prefer the one that does not have other spices added. It is a very versatile spice mixture that can be used to add flavor in almost any dish.
Sukuma Wikis are cooked for a very short time to preserve the nutrients. Serve them immediately and ensure that there are no leftovers.
