  • Warm water
  • Hot milk

Instructions

  • Add oats and butter to a mixing bowl. Heat the milk and pour on top of oat mixture. Stir to combine and set aside for about 1- 1.5 hours. Let the mixture cool to room temperature.
  • To the oat mixture, add honey, warm water, instant yeast and stir well to combine.
  • Add the whole wheat flour into the mixture. Mix until combined.
  • Add the all-purpose flour, a little at a time as you knead, until the dough begins to pull away from the sides of the bowl. Only add enough flour to make a dough that is soft, and not overly sticky. Ensure that you do not use too much flour. Knead for about 5-8 minutes until smooth and elastic.
  • Transfer dough to a greased bowl. Cover with a kitchen towel or cling film. Set aside to allow it rise until double in size; about 1 hour.
  • Punch down the dough to remove excess air. Shape into a loaf and place in a lightly greased loaf pan.
  • Cover loosely with a greased wrap. Let it rise in a warm place until risen about 1 inch over the loaf pan, about 30-45 minutes.
  • Gently remove the wrap and carefully brush some egg wash on top. Sprinkle a handful of dry oats on top before baking.
  • Bake in a preheated oven at 350°F for about 30 – 40 minutes. The loaf is done when you tap lightly on the top and it produces hollow sound.
  • Cool for 10 minutes in the pan, then turn out of pan and cool completely before slicing.

Variations of Oatmeal Bread

This Oatmeal Bread can be made in many other ways

  • Add 1/2 cup of dried fruits such as raisins or preferred chopped nuts to the dough after the first proofing then gently knead into the dough.
  • If you love chocolate in baked goods, toss in some chocolate chips then gently fold into the dough after the first rising.
  • Sprinkle some cinnamon sugar on top of the dough just before baking. Mix 1 1/2 tablespoons of sugar with 1/2 teaspoon of ground cinnamon in a small bowl to make the cinnamon sugar.
  • Make a vegan Oatmeal Bread by using dairy free butter or margarine and non-dairy milk. You can leave out the egg wash for this vegan option.

Storing Oatmeal Bread

This bread keeps well and can be kept in the fridge or frozen in an air-tight container for upto three months. To serve the frozen bread, remove from the freezer and let thaw at room temperature or keep it in the fridge over night before using it.
