Mix together the whole-grain wheat flour, almond flour, sugar, baking powder, and salt
In a separate bowl, mix together the milk, vegetable oil (or melted butter), egg, honey (if using instead of sugar), and almond extract. Stir until well combined.
Step 2: Mixing
Add the wet ingredients to the dry ingredients. Stir until just combined
Gently fold in the fresh blueberries.
Step 3: Cooking
Lightly grease the waffle maker with cooking spray or brush with melted butter.
Spoon the waffle batter onto the preheated waffle maker, filling each mold appropriately.
Close the waffle maker and cook the mini waffles until they are golden brown and crispy, about 3 minutes.
Carefully remove the mini waffles from the waffle maker and repeat the process with the remaining batter.
