Banana Oreo muffins are made with Oreo cookies and are delicious and full of texture for a hearty breakfast or desert. The bananas makes these muffins moist and very delicious too. The first time I cooked these muffins my kid loved them and I have always made them for her during school holiday. They require a few ingredients and are quick to prepare and bake. This is a snack at your own risk of eating more than one kind of a recipe.
Heat the oven to 200°c and line the muffin cups with liners.
Step 2: Combine dry ingredients
In a large bowl, combine well flour, baking soda and sugar.
Chop 12 cookies into small pieces.
Step 3: Combine wet ingredients
Combine together the egg, milk, butter and vanilla and stir in the mashed bananas.
Step 4: Combine dry and wet
Add the wet ingredients to dry ingredients and stir, add the chopped Oreo cookies and mix well but do not overmix.
Step 5: Split remaining cookies
Split remaining Oreo cookies into two and scrape off the cream into a bowl, save the cream for drizzling onto baked muffins.
Chop the split Oreo cookies into halves
Step 6: Bake the muffins
Scoop the batter with a large spoon or ice cream scoop into the 12 lined muffin cups, sprinkle with the chopped plain Oreo cookie halves, gently press the cookies on to the batter to secure them. Bake for 15-20 minutes or test for doneness returns positive results.
Let cool for 5 minutes before removing on to a wire rack for further cooling
Step 7: The drizzle
Microwave the reserved cream on a high temp for 15 seconds or until melted, drizzle over the muffins and serve warm
