Place the butter and sugar in a large bowl and cream together using an electric mixer. The mixture should turn pale and fluffy when done, this will take about 6-8 minutes.
Gradually add the two eggs to the mixture, beating well after each addition
Fold in the self-rising flour lightly and evenly using a spatula. Make sure that you do not over mix.
Step 3: Bake
Spoon the batter into lined cups upto 3/4 of each cup.
Bake in a preheated oven for about 15-20 minutes
Step 4: cool & serve
Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Once cooled, you can frost or decorate to your preference and serve.
