unsweetened coconut flakes

grated orange rind
Instructions
Step 1: Preparations
Preheat oven to 350°F and butter the loaf pan or line the bottom with a parchment paper
Step 2: Mixing
Cream butter and beat in the honey or sugar until smooth and creamy.
Add eggs and beat until incorporated.
Add vanilla and orange juice and mix well
In a separate bowl, combine the dry ingredients
Stir the dry ingredients into the wet ingredients.
Fold in coconut flakes and grated orange rind.
Step 3: Bake
Pour the mixture (batter) into the prepare loaf pan.
Bake in a preheated oven at for 45 - 50 minutes. The bread will be done when a cake tester inserted in the middle of the loaf comes out clean.
Step 4: Cool
Remove from oven and let cool for 10-15 minutes in the loaf pan.
Turn out onto a wire rack to cool further before slicing.
Slice and serve with morning tea or as a dessert.
