There are a few tricks that one can use to make it more enjoyable to eat. One of the tricks is to soak the liver in lemon juice or vinegar for a few minutes before cooking. Alternatively you can soak it in milk before cooking. But if you are like me, you would consider this as a waste of milk. So this is how I cook my liver to make it more palatable.
1tspdhana jeerapowdered mixture of cumin seeds and coriander
4clovesgarlic minced
1tspblack pepper
1tbsplemon juice
1tbspdark sauce sauce
salt to taste
cooking oil
pasley chopped
Instructions
Step 1:
Wash the liver and remove the outer membrane before cutting into pieces
Chop the onion. tomatoes and parsley
In a pan or cooking pot, pour in cooking oil and place on cooking stove for a few seconds then add the onions to sauté for 2 minutes until soft
Step 2:
Add the liver and salt into the onions then cook for 1-2 minute while stirring.
Add garlic and cook on medium low heat for another 2 minutes. Ensure that the garlic does not burn.
Add the tomatoes and cover then cook for another 2 minutes until the tomatoes are well cooked then add the rest of the spices, stir and simmer for 3 minutes.
Add the lemon juice and the soy sauce then simmer for another 2 minutes. At this point, you can leave out the lemon juice and use the soy sauce alone or leave out the soy sauce and use lemon juice instead.
When the liver is well cooked remove from the heat and add chopped parsley (dhania) and leave covered to rest for 2 minutes before serving.
Serve with your favorite accompaniment and enjoy. I serve my fried liver with ugali or boiled rice.
Notes
If you use soy sauce, make sure you use less salt because soy sauce has salt in it.The secret to a tasty liver is the spices .Soy sauce is optional especially if you don't like it in your food.
