Banana avocado cake is a delicious and nutritious dessert that combines the sweet flavors of ripe bananas and creaminess of the avocado fruit to create a moist and flavorful cake that is perfect for any occasion.
Preheat the oven to 350°F (180°C) and grease a cake pan.
Step 2:
In a medium bowl, mash the ripe banana and avocado until smooth.
In a separate bowl, whisk together the mashed bananas, avocado, sugar, vegetable oil, eggs, lemon juice and vanilla extract. Mix them well.
In another bowl, sift together the flour, baking powder, baking soda, and salt.
Add the dry ingredients to the wet mixture, and mix everything together until a smooth batter forms, without overmixing.
Step 3:
Pour the batter into the greased cake pan and bake for 30-35 minutes or until test for doneness comes out positive.
Once the cake is done, remove it from the oven and let it cool in the cake pan for about 5 minutes. Then remove from the pan and let it cool completely on a wire rack.
