Instructions
Step 1: Preparation
Preheat the oven to 180℃
Grease muffin cups or line the cups with cupcake liners.
Step 2: Mixing wet ingredients
Mash the bananas using the fork or a masher
In a large bowl, add the mashed bananas, sugar and butter and mix well.
Add the eggs then the buttermilk and mix.
Step 3: Mix dry ingredients
Mix the wheat flour with the oats; add salt, baking powder and soda and mix well with a spatula or whisk.
Step 4: Mix dry and wet ingredients
Add the dry ingredients into the wet ingredients and mix until just combined.
Step 5: fold in mixed berries
Add the berries into the mixture and gently fold in using a wooden spoon or silicon spatula
Step 6: Pour batter into muffin cups
Using a deep spoon or an ice cream scoop, scoop the batter and pour into the lined cups
Step 7: Bake
Bake the muffins in the pre-heated oven for about 20 - 30 minutes or until the test for done-ness returns positive results.
Step 8: Cool and serve
Remove from the oven and cool for about 10 minutes minutes on a wire rack; serve
Serve with tea for breakfast or as an afternoon snack.
