Ingredients

2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
¾ cup unsalted butter at room temperature
¾ cup sugar gradulated
3 eggs beaten
¼ cup milk
1 lemon juice
1 lemon zest
1 tsp vanilla extract

Lemon glaze

1 cup water
2 lemon juice
¼ cup honey

Instructions

Step 1:

Preheat oven to 350°F (180°C), butter and grease 9 by 5 inch cake tin.

Step 2:

In a mixing bowl, blend butter and sugar together until light and fluffy.
Add eggs, lemon juice, vanilla extract and zest and mix well.
In another bowl, mix flour, baking powder, baking soda, and salt.
Gradually add the flour mixture into the egg mixture and mix. If the consistency of the batter is heavy, add milk gradually to a desired consistency.

Step 3:

Fill prepared cake tin to almost three-quarters full, and bake for 20-30 minutes or until the toothpick test for doneness returns positive results.

Step 4 - prepare lemon glaze:

Combine all the ingredients for the glaze in a small saucepan and simmer for about 10 minutes. The glaze should be thick but pourable

Step 5:

Remove the cake from the oven and let it rest in the cake tin for 5 minutes then remove from the cake tin.
While the cake is still hot, pour the lemon glaze over top, allowing it to run down and sides.
Let the cake cool before serving.
