Pumpkin Almond spiced bread is a sweet, slightly spicy tea bread with an interesting texture, thanks to the ground Almonds. This bread is packed with the warmth of pumpkin, the nuttiness of almonds and warm spices like cinnamon, ginger, and nutmeg.
Boil the pumpkin until soft then puree with a blender or food processor. Grind the almonds into a powder.
Pre-heat oven to 350 °F (180°C) and grease ad dust with flour a loaf tin.
Step 2:
In a large bowl, mix flour, ground almonds, baking powder, baking soda, salt, cinnamon, cloves, nutmeg and ginger (dry ingredients).
In a separate bowl, beat the sugar, butter or margarine, and eggs until very light. Add pumpkin puree and beat again (wet ingredients).
Step 3:
Swiftly, add dry ingredients alternately with almond milk into wet ingredients in two additions. Stir in raisins or figs.
Pour the mixture into the prepared loaf tin and bake in the pre-heated oven for about 30 minutes or until a toothpick inserted into the middle of the bread comes out clean.
Remove from oven and let the bread cool in its tin for about 10 minutes then remove from tin onto a cooling wire and let it cool further before slicing and serving.
