An electric pressure cooker can do more than just pressure cook. It can bake, roast, steam and even make yogurt. You can use an electric pressure cooker to bake this crunchy and soft banana walnut cake and your family will love it.
Cream the butter and the sugar together until they blend well
Add the eggs and mashed bananas into the mixture and whisk until mixed well
In a separate bowl, sieve the dry ingredients together, flour, salt, baking powder and baking soda; mix them well
Add the dry mixture into the eggs and banana mixture and combine them well using a wooden spoon of a spatula
Add the chopped walnuts and fold them into the mixture until well combined
Prepare the cake tin by greasing or lining with a parchment paper
Pour the cake mixture into the tin and cover the top with foil paper to avoid contact with the steam from the cooker
Pour 1 cup of water into the pressure cooker then place the trivet inside
Place the cake tin on the trivet inside the pressure cooker and cover with the lid
Depending on the brand of the pressure cooker you are using, use the bake function to set the timer on the cooker; if your cooker does not have the bake function, set the timer manually at 30 minutes
When the timer gets to zero, release the pressure manually to open the lid
Test for doneness of the cake by using a toothpick; if done remove from the cooker and let it cool before serving
Notes
You can use sweetened sour milk (mala) in place of plain yogurt.
