Orange cake with walnut recipe

Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup olive oil
- 3 eggs
- 1 cup orange juice
- 1 orange zest
- 1 cup chopped walnuts
- 1 tsp vanilla extract
Instructions
Step 1:
- Preheat your oven to 350°F (180°C). Grease and flour a baking tin or use a parchment paper to line the tin.
Step 2:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
- In a separate mixing bowl, rub together the orange zest and the sugar then add olive oil and eggs then whisk until light and fluffy.
- Add the orange juice and vanilla extract to the mixture and mix until well combined
Step 3:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped walnuts into the batter.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and allow it to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Notes
Replace walnuts with your favorite nuts or fruit; you can use pecans, raisings or any other dried fruit that you like.
