Quick and delicious orange raisins cake

Ingredients

Olive oil/melted butter/canola oil

raisins

Zest of 1 orange
Juice of 2 oranges

Instructions
Step 1:
Preheat the oven to 350°F (180°C) and grease a 9-inch cake pan then set aside.
In a small bowl, combine the raisins and orange juice. Set aside to soak for 10 minutes.
Step 2:
In a large mixing bowl, combine the dry ingredients; flour, sugar, baking powder, baking soda and salt.
In another bowl mix the wet ingredients; melted butter, eggs, and orange zest. Mix until well combined.
Mix dry ingredients with the wet ingredients then mix well making sure that you do not overmix.
Add the soaked raisins to the batter. Mix properly until well mixed into the batter.
Step 3:
Pour the batter into the prepared cake pan and smooth out the top with a cake knife.
Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let the cake cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.
Serve cold as a desert or with morning tea.
