This boiled fruit cake is the best and easiest to make. It is packed with bursts of naturally sweet fruits and a hint of spices. It is the kind of dessert that feels like a warm hug on a chilly day. Grease and line the base and side of the cake pan with parchment paper.
Step 2: Boil the fruits
Place the condensed milk into a large sauce pan with a heavy base.
Add the butter, dried fruits and heat over a low heat until the butter is melted then stir and simmer for 5 minutes.
Remove from heat and put aside to cool for 5 minutes
Step 3: Mix ingredients
Sift flour and spices into a large mixing bowl and mix well.
Beat the eggs lightly.
Add the beaten eggs and the cooled fruits into the flour mixture. mix them together quickly until well combined.
Step 4: Bake
Spoon mixture into the prepared cake tin.
Bake for 1 1/2 hours or until cake has risen, firm and golden brown. Alternatively, insert a skewer in the center of the cake. If it comes out clean, then the cake is baked.
Step 5: Remove and cool
Remove from oven and leave to cool in the tin for 10 minutes
Remove from the tin and let it cool completely on a wire rack.
