These simple chai spice muffins are rich and warm. They are spiced with a blend of chai spices such as cinnamon, cardamom, ginger, cloves and nutmeg. These aromatic spices create a cozy, soothing taste, making these muffins a worthy companion to your cup of tea or coffee.
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups lightly with oil or butter.
Step 2: mix dry ingredients
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and all the chai spices (cinnamon, ginger, cardamom, cloves, nutmeg, and black pepper if using)
Add granulated sugar and brown sugar to the mixture and mix well to combine.
Step 3: mix wet ingredients
In a separate bowl, whisk together the milk, oil (or melted butter), vanilla extract, and egg until well combined.
Step 4: Combine Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients. Gently fold the mixture together until just combined. Be careful not to overmix—it’s okay if there are a few lumps.
Step 5: Fill the batter into muffin cups
Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full. If desired, sprinkle the tops with turbinado sugar and a pinch of cinnamon or chai spice for extra flavor.
Step 6: Bake
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Step 7: Cool and serve
Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!

For an extra boost of chai flavor, steep a chai tea bag in warm milk before adding it to the batter. You can also add a bit of black pepper for a subtle kick.
